Got a Cotic rocket (large) that I love but it makes my back ache on longer rides, I think because it's a little short. I currently have a 70mm stem on it.
Cotic recommend 80mm max. Would I notice the difference? What would it do to the handling? Could I go longer than 80?

Depending on what part of your back is aching you could even argue going shorter would be beneficial.

or moving your seat

May be worth thinking about a few spacers under the stem, or a stem with a bit of an angle to it. Could be worth getting a cheap adjustable stem (they can be had for about a tenner I think) and just playing with that a bit and see how different settings feel. Or look at bars with less of a rise maybe?

What mrblobby said. Without pictures of you on it, it's very hard to tell, so playing around with stem height/ angle could be a best option.
But look at it from a different angle as well. You can get a foam roller off eBay for £9 and roll your back every morning. This will make you a bit bendier! My Osteo recommended this to me after a twisted pelvis and it really does make a major difference.
