Potentially in need of a wide, flat bar, with a decent amount of sweep. Carbon or ally considered...
MUST be 780mm minimum width
MUST be 31.8 bar clamp dia
MUST be no more than 5mm rise (effectively flat, I have 12mm rise now and I need lower)
MUST have a decent amount of sweep (9-10deg preferable)
I've still got an old Sunline 762mm flat bar kicking around but things have moved on in 10yrs, and whilst that was extreme back then, I've got used to 780's and anything less feels narrow now!
OR... Anybody know of a 55mm(ish) stem with a significant drop to it?

Already done that, and put all the spacers above it too...
This is a pre-emptive strike against adding an angleset, which is going to increase my stack height by 7-10mm.
Renthal do a flat bar with 9 degrees sweep. It's kinda ugly but I like it.

I have an SQlab bar on my S120, 16 deg sweep (there's a 12 deg version as well), 780 and 31.8. There's some rise to it but they might rotate enough to work.
Race Face used to do a 785 low rise bar - I think in 5mm and 12mm rise could be worth a look.
Whisky No9 flat bar is 840mm wide and 9 degree sweep.
As it happens, I have one cut down to 780, barely used if you are interested.
Syntace Vector alu or Vector carbon in 12deg.
Pricey but very good quality bars, particularly the carbon one.
Bedmaker's Whisky#9 bar would be perfect I reckon, they're really nice kit.

A little bit, but they often have a taller headset cup- it's pretty common to go from a bottom zero stack to a 10mm stack.
Would 760mm do it?

Didn't know that! Have previously ruled out Renthal cos I've found their 7deg sweep risers too straight for my liking. Could be ideal...
Those Kore Torsion look good, but can't find who does Kore in the UK any more, and it's a lot heavier than I was expecting sadly!

Only about 3mm I've calculated... I'll be gaining 10mm with the external top cup (EC44 for the angleset, ZS44 fitted currently) so overall gain would be 7mm. I'm running 12mm rise bars now, hence keen to go to 5mm or preferably flat, so I can potentially even consider playing with spacers rather than just assuming it needs to be slammed.

Wasn't aware of that... Looks good! 16deg would be too much for me, but 12deg could work... A mate of mine used to look after SQLabs in the UK, shame he doesn't any more!

Not aware of a 5mm rise bar Raceface did. I know of their early 12mm rise Atlas riser, then they went 10/20/30 options on the rise around 2015 iirc... Most of their range is 35mm only too annoyingly.

Which point is the rise measured from? - It is not stamped on the bar.

Bought a 750mm Salsa Salt flat a few years ago. Put it on my bike at the time, rode it down the street to check for position, could feel it flexing literally 30mm up and down in my hands, and took it straight off again!
I was under 80kg then, I’m 90kg now... I get that if you’re a light rider and you’re running rigid you want a bit of give in your bars maybe. But I’m not light, that’s what a suspension fork is for, and I want to feel confident and in control, not like my bars are made of Spaghetti!
I've recently gone to the Alloy Renthal 'fatbar lite zero' from a Nukeproof bar (also flat) and the increase in stiffness is really noticeable even as a 60kg rider.
