It comes off so you can fit a rear light that comes with that specific type of mount.

Brompton make one I believe.

Either that of you've kackhandedlly broken your saddle.

Looks like a rebranded Fizik one but I’m not sure.

Folk 3D print clip in mounts for the light of your choice. I have an Exposure TraceR mount on the road bike Fizik saddle.

So if it's a gap to attach things (lights) to, why does it need the Selle Royal bit to plug in there? When would I ever need to put that back in?

It doesn't and you don't. It is just branding plus an intuitive illustration to the end user that there is a clip thingie you could use.

The fizik saddle pack is excellent, as are the Cateye saddle clips for rear lights. If taking two bottles, I'll use the small pack, otherwise I often use the rear light as a backup (Cateye Micro) - main is a Garmin Varia.
