Easier to wheelie.
Shorter back end so easier to chuck about/be more flickable.
Better on tight corners.
Harder to climb because it wants to wheelie.
Less stable on big swooping fast corners.
Less mud clearance.

Cheers I_Ache! So, what would be considered a 'short chainstay' then? And what's considered 'normal' to judge this against?

On a 26" hardtail I'd consider 420mm short and 435mm long.

Would have to disagree on this point, shorter is better for climbing, more weight over the back wheel means more traction, as for wheeling, maybe you should lower the bars a bit.
