As the title? If I want to train on the road on my 29er, what size tyres would I need? I currently run Stans Crests

I use Schwalbe 2.10 Big Apples, heavy but strong, good for training 😀

At a guess, 29er tyres!

If by your question you meant "I'm wanting to do some more road miles on my 29er, what tyres can I run that would be more suitable for road use?" Then there's lots... Any 700c tyre will fit (as long as it's not too narrow), you could probably go down to a 32c or possibly even a 28c on a Crest.

Saw some Schwalbe Marathon Racer's on Planet X website at about half price yesterday, those would be a good bet. But quite frankly any 700c tyre that's wide enough for your rims, and has less tread than a knobbly, will do...

Wouldn't go below 32c on crests if I'm honest

I've a couple of wire bead Schwalbe something or others, that came off my Ute. (1.25" I think). They roll well. Probably a job to get onto some Crests though.
