I've been there on holiday without the bikes but driven in the hills. It'snot the Alps but you can find some proper long climbs in the hills which is why a lot of pros train there.

triple? compact maybe useful.

I've not ridden there but do ride in Southern Spain.
The main difference you will probably find is out here a mountain climb can take a long time. There are some steep climbs in the UK but they are short. Here you can climb for an hour+
I ride a 50/34 which is fine for all climbs I've ridden. I've never missed the extra ring. The descents tend to be winding too so unless you are very confident you don't tend to run out of gears there, though it has happened.
All riders I see don't ride a triple but that could be more of an image thing rather that practicality.

I've lived in Southern Spain for about 11 years in a mountain area .
My road bike has a triple but i rarely used the small ring.
A 50/34 should be no problem if you're reasonably fit but as has been commented climbs are long.
The climb from the nearest town from me,Alhama de Murcia,up over the Sierra Espuna is about 11 miles. Not much gear changing and a fantastic road that rivals anything in the Pyrenees or Alps.
