Convince me it's so easy to adjusting chain tension/brake position that it doesn't become an annoying faff.

It really is easy - especially if you use the On One tugs. You'll be fine! All you do is wind on a bit more tension as the chain wears.

What about getting the wheel out, what's the technique (especially out on the trail)? Was thinking of a surly chain tug.

Have used a singulator and a Forward Components EBB in the past.

Got a Scandal with sliding dropouts and Surley chain tug and its the mutts nuts. Unless others know different, you unscrew the nut on the qr and pull and take the chain tug off. Slide the wheel forward so you can take off the chain and then pull it out. But to be honest I haven't had to take the wheel out since I built it up.

If you get the on-one tugs turn the back bit round so the recessed bit is away from the frame. They come out nicely for wheel removal then.
