Did about 60 miles today up and down the Kerry mountains and came back pretty knackered with massive headache. Overdone it.
Far too mild to be heatstroke/sunstroke but feel nauseous and weak so wondering if it's a thing.
Strava tells me I started well but maketly tailed off towards the latter half of the ride.

Is that not what heat/sunstroke is?

You may have heat exhaustion. Trying not to be a judgy **** but don't overdo it in crazy heat again! Sunstroke is serious.

You've lost too much fluid. Happened to me once when chainsawing. Took a day to recover. You have to be careful to lay off a lot of energy drinks in intense heat. Too much sugar dehydrates you.

I'm in Queensland where even a winter day can hit the mid to high 20s.
In summer I normally allow for about a litre of fluid per hour of hard single-track riding, but don't find cycling too bad.
I carry rehydration salts in my pack when on motorbike rides in the woods and on two occasions now have had to bail out other riders (one was my father in law!) The speed in which it can all go wrong is remarkable. But likewise five minutes is all it takes for the electrolytes to kick in.
A few years ago a local guy died from heat exhaustion after he had some mechanical issues. Told his mates to go ahead, when they came back for him and called an ambulance it was too late.

Water alone won't help you recover as well. It's electrolyte imbalance as much as dehydration.
