We are putting a square taper bottom bracket and crankset on an inbred as a tourer.
due to being a tourer, we are using bigger chainrings (48T) however this is causing some minor clearance questions.
If i use a 120mm long spindle, rather than the standard 115mm spindle, it should solve the problem, but obviously this will mess up the chain line a smidge.
is this a problem?

very much doubt it'll cause anything noticeable...it's only 2.5mm more on the drive side. Also
iirc the sq tp chainsets had a chainline of 47.5 whereas h11 chainsets now are at 50mm so that's where you'll be and shimano obviously don't see it as a problem.

Kaiser is right that the extra 2.5mm will not cause significant issues with a multi-geared build, but wrong that all ST have a 47.5mm chainline. Older 8-sp Shimano were, but I have several 9-sp (Shimano, Truvativ and Sugino) that are 50mm with the 'recommended' BB.
I have done the opposite to what you are suggesting to bring my middle ring closer to the frame to give a better chainline for the middle and granny rings when using predominantly offroad.
