I have to replace all the bearings in my superstar evo hubs,SKF are five times the price! Are they worth it?

if it's five time the cost of rubbish chinese bearing then yes... any branded bearing (INA,FAG,etc) is better than un-marked ones.
I stick to my engineering guy's (guy @ my last place of work) philosophy, they maybe cheap but having to strip them out after a quarter of the time (if that) of decent bearing, doesn't make them so cheap.

Branded bearing normally cost me around £8-10 each (cheaper as sets), well worth the cost.

I dunno, but greasing them before installation is worthwhile IMO/E

I was amazed at how many times more expensive they are than cheap ones.

What is the difference in manufacturing/materials which justifies the extra price?

Errr, think about what you've said. If they last a quarter of the time and cost 1/5, they're still cheaper than SKF et al.

I had some nice posh SKF bearings in my Power Tap, they didn't last very long at all, so I put the cheapest ones I could find in, on the basis that I'd just change them more often. They're still fine. When my MTB hubs needed bearings I just bought cheap again, happy to replace them more regularly.

I am no expert but some of the differences i know of are the more expensive ones are generally stainless steel where the cheaper ones are chromium steel the balls in the more expensive ones generally will have a greater tolerance on the sphericallity (is that a word? they are more sphere shaped) of the ball.

I was being generous on the length of time they last TBH for a more balanced argument, and that doesn't include the hassle that being a self destructed bearing can be if they seperate while in place (more likely with cheap rubbish), let alone the hassle of having to change them constantly.

IIRC some-one on here bought a pile of cheap bearing for the cost of 1 decent one, off ebay, after the first 3 had died within no time at all, he binned them.... this was my experience, as a local bearing supplier only sell chinese stuff.. I swapped bearing suppliers when they (bearing not supplier) died

Deep groove radial ball bearings are not all made to the same standards with the same materials.

http://www.gmnbt.com/deepgroove_technology.htm

But if you have the dimensions of the bearings that you want

eg 12mm I/D x 28mm O/D x 8mm Thickness
then just type
12 28 8 bearing
into google or Ebay and you can see the choice of manufacturers and prices generally available.
