I’m wondering if I have the wrong fitting? Do shimano have different brake hose bolt diameters?
It seems to do up okay without the hose in, but without only foes part way in then just turns
No signs I’ve stripped the threads

If brand new brifter Have you left the pre installed olive in there?

Yes the new STIs use are M9, The "standard" older shimano ones were M8.

I reckon
A) I need the m9 bolt, and
B) if there’s a pre installed olive it’s still there!!

If you haven't got the bolt, you won't have a pre-installed olive.
