Any reason a set of 180 and 203 XT rotors won't work with Saint calipers?

They'll work fine, new saint rotors have fins to cool them down. Unless you're going lots of stuff in massive hills I wouldn't bother.

RT-86s? They work fine with everything Shimano I've used them with Deore/SLX/Zee/XT/Saint and Hope for that matter
You really need RT-99s with Saints though 😉
