I'm going to Las Vegas from 3rd to 10th of November and I fancy doing 3 or 4 days riding somewhere nearby. Can anyone recommend a mountain bike tour company for rides in Zion National Park or the Grand Canyon, or anywhere else within a couple of hours drive?

Bootleg Canyon Looks good. Temps in February were perfect. I saw someone dropping off a hire bike (Specialized Demo 8) to the stratosphere hotel, so it's pretty do-able.
A lad and lassie from McGhies took us to Cottonwood canyon which was damn good fun, but not terribly gnarly *unless you hit a cactus*

Also it can be damn cold out there even when the strip is toasty. No idea how but we had fleeces on to ride.
