I've been racking my brains trying to think of fiborous vegetables that grow above ground in a variety of colours but mostly green and can only think of peas and green beans. What else is there?

Also I can't think of any protein rich breakfasts other than eggs?!

Maybe this is why I'm overweight too?!

Spinach, sweetcorn, fennel, globe artichokes, asparagus, broccoli, calabrese, avocado, sprouts, aubergines. . . . .

Kippers, smoked salmon with scrambled egg.

Interesting as I've seen mentioned a few times in different places that 'above ground' veg are best. Why?

I'm not sure that being above ground is the defining factor its just that root veg are all starch / carbs / sugar and above ground are all leafy / vitamins / minerals and for most people its the latter that they are lacking and the former that is easier to substitute with other stuff.

There must be a million and one articles saying that leafy green veg (cabbage, kale, spinach, broccoli, sprouts etc) are the thing we need to eat most / more of. Trouble is most of the time its not what we fancy plus unlike salad stuff it needs a bit of cooking.

Recipe:
Any green leafy veg
Some chorizo
Chilli flakes
Crème fraiche
Parmesan

Put some pasta on to boil (60-100g each)
Fry the chorizo and as soon as the fat starts to appear, add the chopped veg, some chilli flakes and a leek, onion or celery if you like. Stir
When pasta is cooked, drain. To the veg, add a large spoonful of Crème fraiche and grate in some fresh parmesan. Stir in the pasta and voila, a delicious healthy meal in 15 minutes.
