When setting chain length do I want all the air out of the shock to know what the maximum “growth” will be?
How do clutches fair with chain growth - anything to look out for? I’ll be running a cup saucer esque 11-36 cassette.

Yes, you need to cycle the suspension through the complete range of travel to find the point of maximum growth.
How do clutches fair with chain growth – anything to look out for?
Don't think so - the clutch doesn't affect the geometry, just makes it stiffer for the mech to extend.
