Devon is quite a big area.. Dartmoor is good.

IF your looking at North devon, try Exmoor, but don't bother with the coast around Barnstaple, Braunton etc.

If it's singletrack you're after then Exmoor would be my choice...
...or Dartmoor.

TBH Devon is a bit flat and the countrside thing is actually a myth. Since Torquay expanded to become Torbay it has pretty much swallowed the whole county. Best stay home.
