I’m thinking I want consolidate my Alu Defy 105 which is used for turbo and winter duties and my Charge Grinduro for a single multi purpose bike much like the Tripster AT. However, I don’t want a bling bike to sweat all over, this is my “second best” road bike.
Assuming I may get £400 for both of those, I’d have a budget of £1000. What can be on my list?

The Sonder Camino isn't a bike I've any experience of (so not a personal recommendation) but they seem very well regarded.
If I could afford a second bike I'd be seriously tempted by a lovely looking Red Chilli V2 model.

I'm loving my new Diverge. It's a Future Shock model so would be out of budget and was out of mine until a test ride convinced me to up it but the Camino, Pinnacle Arkrose and Cotic Escapade were all on the list. Again not test ridden any but all well regarded.
Was also going to suggest Spez Diverge.
I got a second hand/older shape as wanted both pannier and guard mounts.
Been pretty pleased to date, it's my do everything bike and replaced a Genesis CX and a Spec Allez.
I have to say the Arkrose 3 with Hydro's and 105 appeals to me...
Are the WTB I19's ok to stick road tyres - specifically GP 4000 GT 25mm on?
Ideally, 28mm tyres and over should be used with 19mm rims.
Those Arkoses seem to be randomly on sale; depending on timing and luck, you could get a 3 for well under RRP.
Ah. Well, I may have to leave the 25mm tyres on the Defy to sell it anyway, and invest in some new road winter tyres for the Arkrose...
Arkose here, like it so far. Works well for me and if that spec is in budget I reckon it's a solid choice
Mine is currently having a full drivetrain replacement so is in a stand in the garage, but it'll be back to commuting duties as soon as that's done

I've had nominal 23s on 21mm internal rims. They looked a little weird and I didn't keep them on long term but didn't kill me in the time I had them on. I wouldn't sweat over 25s on 19

Not sure of your point, but I've done a lot of winter miles on mechanical disks (BB7s, like those), they're faultless.

IHN, I just don't want to be arsed winding pads in TBH, and its a backward step compared to the Hylex I have on the Grinduro.

Just buy the tripster AT. It's a little heavier than perhaps I'd like but it's rock solid. I got mine for about 500 quid new so parts bin + second hand I reckon you could get one built up with tolerable components for 1000-1200
I had the same conundrum.
I bought a Camino Al frame and did a nice build on it.
Its grand for the money albeit it’s been a lot of years since I bought a frame/fork that didn’t even come with bolts for the water bottles/rack holes or hose guide clips.
QC isn’t great either. Too much paint on rear dropouts that needed filing away and the 27.2mm seat tube is in need of a TIGHT clamp as it’s been reamed out too much (apparently within 1mm is ok according to Alpkit but I was a bit surprised). My Thomson clamp max torque wasn’t enough to stop the post slipping so I went with a cheap one and white knuckled it up.
you get what you pay for…
