I've fitted these hoses to my brakes:

I've bled them and tested them and discovered fluid is leaking from the banjo connection between the hose and the calliper.

No instructions came with the hoses, but there were a number of rubber seals. I used a rubber seal between the banjo and the calliper, but on previous installations there has been a copper washer here instead. Eg, Hope M4s etc.

Should I remove the rubber washer, remove the rubber washer and fit a copper washer, or do something else?

I've already spent ages fitting these hoses as they come with more connectors than you need, a load of seals and no instructions so it's difficult to work out what goes where and where you do and don't fit the seals. The olives supplied are for standard diameter hose, but the hoses are slightly wider so I had to file the olives wider too, so overall I'm pretty unimpressed with Clarks hoses.

I have some Clarkes braided hoses which are easily comparable to the Goodridge braided hose they replaced.
With regard to the braided hoses I transferred the Goodridge hose fittings across which have been leak free.
They consist of a mounting bolt which passes through the centre of the banjo which on its underside has a small o-ring which sits within a slight recess, when the bolt is tightened down it compresses the o-ring to create a seal.

Not sure how this compares to the banjo fittings supplied with your hoses.
Does the Clarkes website not have a online diagram showing any typical fitments?
