after a new one for winter - currently have have mule light weight limited edition one which is superb in the summer- but with the wet horrid weather upon us i would prefer something a bit bigger for clothing and the likes, also are there any water proof type ones? Current mule light weight gets filthy and soaked through off mud and rain, is there a nice bigger sized water proof one out there that rain and mud will just run off? Any brands welcome!

Get a waterproof cover for it!
Deuter TransAlp. I use it as my guiding pack. Has a built-in waterproof cover, loads of space, reasonable weight and it still looks new after a full summer of guiding. The Deuter bladders are brilliant too, although they're not included with the packs.
