I am looking at getting a pair but I fall between a medium and a large. Do they have much flex in them?
If I go for the medium will they feel like they are cutting me?
Or are they generous in their sizing charts?

Mediums are better for me, I have both and like you fall in between.Very comfy and light though but stretch a little after a few rides/washes
Go smaller. I'd say my legs were decidedly medium but wear a small very comfortably.

...i wouldn't say i have the biggest legs in the world, but i had to get xl... and i must say, there not exactly loose! ๐ณ
They do flex a bit when wearing them and their sizing charts are not accurate. Their chart measurements said large for me but tried both mediums and large and I went for mediums. They felt snug at first but they soon give when riding.
I borrowed them from my girlyfriend and was impressed with how comfy they are, I think their ubiquitousness speaks volumes for their value/performance.
get tight fitting as all pads give when worn a bit
Ditto Jedi - and whoever said get tighter (but not too tight obviously). Mine (mediums) were a bit tight at first, but gave after a while. Wear them for long XC rides, and barely notice them now. Sizing charts aren't particilarly helpful though.

Top of knee 18"
Will the top really give 2" worth of flex if i go medium?
The Top is the most important measurement i think as this bit holds them up.

No where has them sadly, Leisure lakes in Cheltenham didn't have any yesterday and no where else stocks them. I was going to buy them from CRC today.
Buy both and send one pair back?
