Not ridden either but I like the idea of the Gixer, an ideal compromise between 600 and 1000 in my opinion.
What year are you looking at ahotshot kind of rider are you? Using it for track days at all?
I've had a 2005 CBR600RR, 2006 Yamaha R6, 2005 CBR1000RR and the 2003 Kawasaki ZX636.
They're very much horses for courses, but I loved the Hondas for fast road riding, didn't take either on th track though. The R6 is more of a track focused bike that will do pretty good on th road. Not as comfortable as the Hondas.
If I had a choice again I'd get another Honda as theyre great bikes. The Gixxers don't look great before K6 imo either.
CBR has basically always been the best 600 ever since they invented it. But lots of people don't want the best, they want something with a bit more fire in its belly.
Try and ride them both.
Ive had an R6 2006 plate before really nice bike but never had a gsxr or a honda so maybe for a change. It would be a summer toy only no track days.
There's no capacity limit on the road, buy something with a bigger engine.
Near as dammit the same weight/size but seriously more power - and even if you don't want to go any faster its so much more relaxed at any speed.
Depends what you want.
Race or all rounder?
CBR or CBR-R/GSX.
Ride both, see what suits you and fit.

I'd say go for the 750 but if its for road use only then you should seriously consider a litre bike. They are not that much faster than a 600 at full chat but the low down grunt makes them far more suitable for the roads.
I went from NC30> 03 636> 08 R6 and now a 08 R1. I thought the R6 was a good bike but you needed to thrash the tits of it to make it work. Totally gutless below 10.5k with a sorry excuse for a midrange starting at 8k. Unless you were riding it flat out it felt a bit pointless imho.
The R1 on the other hand has an engine which feels similsr to the V4 400 but with 3x the bhp. Open the throttle at 2k and it just shoves you forward getting stronger up to 7k where it ramps up and continues to 13k. Sometimes you don't feel like riding at 100%, you just want to bimble along and make lazy overtakes without having to change down three gears. This is where 1000cc makes a far better road bike.
Riding a litre bike onto a m/way slip road in 4th gear at 30mph then pinning back the throttle until the shift light flashes is something every biker should experience, even if its only on a test ride 😀
If the only choice was between those 2, I'd have the CBR, but that said, the gixxer won the best of test a lot that year if I remember right.
I had a 05 R6 and an 06 636 Ninja. The ninja is a far superior bike for the money and you can get them for nothing these days - maybe around £3-3.5k. It had wavey discs, slipper clutch, etc all as standard.
I've ridden one of the first rr's, and used to own a cbr 600, both lacked mid range imo. Might have changed now, but I have had 4 gsxr 7's from srad to k4, k8 and I'll stick with them thanks. Perfect bike imo. If there were other 7's, I'd consider, bit there isn't
the gixxer i had was the best bike ive had so far.....gear box was so smooth,my first bike was a cbr6 but not half as much fun as the gixxer..the finish on any honda ive had has been exemplary though...
i lent my 750 to a few mates who had 1000's and they were very impressed.ridden right i reckon theyres very little between em...
but i had a naughty can on each...what a difference that made both sound and performance...

always found the big H was the safe bet...but knowing it was meant it was less...fun is suppose (i feel the same about my spesh pitch now...i KNOW that it can ride far beyond my talents...makes it a bit less fun somehow)
I had a test ride on a 600rr, very quick when reved up but i quite quickly got my head around using its performance. Then tested a fireblade, that scared the cr@p out of me at near enough any revs, any speed. 750 sounds ideal!
to follow up some other points (not really answering the OP) my 05R1 is easier to ride slowly than the 05ZX636 C1 that preceded it. Kwak was brilliant but needed a steering damper, but after a massive tankslapper (my first and only in 20+yrs on a range of bikes) I decided to scratch an itch and get a litre sports bike (rather than just spend a few quid on the damper 😀 ). Put a 1000 miles a month on the R1 the first 6 months of ownership I couldnt stay off it, still got it 4yrs later and only half considering changing it for a pillion-friendly grunty bike like a triumph triple or KTM SMT (ie something completely different).
The current 600rr is supposed to be sublime though and if I was in the market for a supersport I'd make sure I test rode one.
R1 in gentlemans tourer mode, wicklow gap Ireland (hiding a tatty 929 blade)
And mid wales, mid 500 (damp) miles in a day backroads epic jaunt
Test ride both then you will see the difference between the two is vast. The 750 is a beast and as such you have to ride her hard to get the best and not for the faint hearted when you do...
What is you riding history & what do you want out of a bike?
You can ride slowly on any bike. You can cruise on any bike.
You can only scare yourself to death on a Japanese1000.
So I vote for the 04-06 R1.
I have 3 R1's and that model is the most user friendly but also the most insane too
I've had 600rr and r6.
The R6 felt more focused than the 600rr with the Honda better all round I.e in slow traffic when you fancy a super quick commute. Wouldn't want to be on either one for more than an afternoon and I'm only a young'n without arthritis!
The mrs didn't like been on either though!
I think it's really important to test ride a bike before buying it.
Everyone has such different and sometimes minor preferences on handling, engine performance and fit.
For example, I thought my 08 Blade was amazing, but my friend who had a GSXR1000 didn't like it because you sat 'on' the Blade rather than sitting 'in' the GSXR if that makes sense.
I have pretty much always gone for Honda's and owned a few Blades and a CBR600. I have owned other sportsbikes such as a ZX10R, GSXR1000K6, R6 and an 04 R1, but always ended up going back to either a Blade or some other Honda model. Honda's just happen to suit me.
I like the way a CBR600 and a Blade makes everything feel easy and relaxed, even when pressing on. Some people might find them a bit souless though, depending on their point of view.
Even when bikes have similar performance figures, they can be worlds apart. Take a CBR600rr out and then an R6, there is a huge difference in the way they ride, both in the way the engine delivers it's power and the handling.

Went down the upgrade route in the end.
If you are looking at 600s and 750s,DO NOT rule out the triumph 675 daytona.They are very very good.Try one,most triumph dealers are good when it comes to test rides too.I dont think you will be disappointed.
