Got some oldish eggbeaters and the rebuild kit to match. Just about to start and realised the end cap of the pedal is made of plastic, (not the later metal) and when I tried to unscrew said caps I've just destroyed them so how can I get these plastic caps out of my pedals?

same happened to me, ended up grinding a hole with a screwdriver then used a pliars to pull it out, not elegant and took a while.

managed to do it. There are a couple of plastic washers I haven't used but can't see where they'd go but I reckon the pedals should be fine.
