Looking for rims that is a good all rounder that will seat dual ply, exo and standard tubeless, I've never used dual ply before and wasn't aware of any problems till now

Shouldn't be any issues? Getting a dualply on some rims can be harder work just because they're less flexible but all rims[i] should[/i] work with all tyres.

Which would be better ztr arch or mavic 721

Pretty different tbh, 721 is a heavyweight, arch is a lighter rim and less strong, but tubeless ready. Depends what you want it to do.
