My last tubeless tyre took me 2 weeks to fit.
Tonight 10 mins. You WILL need a ghetto compressor,neat fairy liquid and a tube to seat one side of the tyre.
I might even take it off to have another go.

Ps in that time I even fixed a puncture with those anchovie things. Are they a permanent fix or does it need a patch inside?

I found the easiest solution was just to keep adding more rim tape until it's airtight. That and CO2 for older tyres.

I also had a painful start with tubeless. I feel your joy brother.
I have found those plug repairs to be pretty reliable. Worn tyres out with them in.
