Can anyone explain to me (in really simple terms) the difference between the Bottom Bracket decriptions...
what's the difference between a BB30 and a Mega-Exo for instance?

Square taper - standard axle with square ends onto which the cranks pressure fit. Bearings are internal inside a cylinder which screws inside the BB shell
Octalink/ISIS - similar except that the axle ends in a splined interface
Mega Exo/EBB etc - bearing mount outside the shell and a separate axle (usually attached to the drive side crank) is pushed through
BB30 - new larger format allowing larger bearing to be used

...are there any issues with compatability for instance fitting a Mega-Exo BB in to a BB30 frame? Can this just be sleaved or is this a no-go area? 😐
you can only fit a BB30 BB into a BB30 BB frame
unless someone makes reducer cups but i doubt it
