Does anyone here have experience of biking in hilly regions around Valencia Spain?
Interested in hearing about anything from Road riding to XC to DH.

Been there for motorsport watching. Nice city. Probably about 30 mins from anywhere hilly

If you can manage an hour drive south of Valencia you can get to the Sierra Mariola, home to the La Fenasosa bike park which offers DH and XC trails.
There are also plenty of free trails to be had in the Sierra Mariola, especially if you like long, tough XC rides. A great resource for finding trails in Spain is Wikiloc:

I won't have a car but may be able to borrow one for a day.
I'll be out west of the city.
