Have a look at Kriega, a tad pricey, but excellent build quality. The Hydrapak bladder is much easier to clean than the Camelbak bladders.
Dueter, Race x Air. Enough space for all day rides, Great fastening system. Light and Durable. Wrecked an older version and replaced it immediately.

Loads of room for winter kit or whatever
Lots of sensible sized organiser compartments for map, compass, tools etc
Camelbak bladder fits in well
Nice external web pocket for things that need to be grabbed quick - Jelly babies mostly.
Very comfortable even when fully loaded.
Summertime I may switch to the old faithfull Camelbak Mule although I find it's cargo capacity can be a bit of a squeeze.
