GF wants a basic bike computer.... something that gives speed, trip km, trip time etc.
Not worried at all about GPS (phone does that), cadence, heart rate etc. Elevation would be interesting, but not essential (and probably inaccurate).
Basically something that can be left on the bike.

Cateye Quick ?
My Mum was the same but actually just doing everything in one device was nice and simple and then saves the battery on her phone (which my Dad is happier about when she goes out on her own, and has resulted in less errors) so she got a Garmin 130. Can pick them up from Halfords for £99 atm.

Does she ever ride with a modern rechargeable LED light? One thing we've discovered this year now my wife has dusted off her old Cateye wireless computer is that it doesn't work when she has her Niterider light on. So she now has the most basic Garmin GPS computer.
Bryton do a GPS computer called the rider 15 for about £50 that will do all the data stuff just no mapping.

Simple,basic, works really well and survived a trip in the washing machine.
The cheap GPS devices are all very well, but the OP did specify "something that can be left on the bike". I used an Aldi special wired computer quite happily for years - they're all much the same so I reckon just get whatever is easiest/cheapest to lay your hands on. eg:

The cheaper ones often have the clearest, simplest displays and while a wired one is a little more awkward to fit, the user doesn't need to remember to switch it on each ride. Mount the magnet and sensor on the brake side of the wheel and spiral the cable up the brake hose to the handlebars for a neat installation, if you'll excuse me teaching granny to suck eggs.

In my experience anything with a wheel sensor, from cheap to expensive, wired or wireless, will fail.
We seemed to be regularly buying new bike computers for kids, then ended up getting cheap Garmin 500s even though they are only really interested in speed and distance. Have worked faultlessly for a few years, and give so much more info (like ascent height, beeps every mile, fastest speed) if you want it.
Old skool wired computer, £10 from Halfords/Decathlon/etc
I bought a couple of basic wireless computers from Decathlon for the kids bikes, work well with a clear display. The mount isn't really up to kids abuse but they've worked fine.
I have a Garmin 130, it's got quite a few features for a small bike computer including text messages, power, barometer, etc, etc.
My wife wants a basic bike computer now, I was thinking of getting her a Garmin 25.
