I know roughly how much you can expect it to inflate a tyre, but does anyone know the pressure inside the can? I'm assuming it must be redonkulously high tbh but how high?

Somewhere around 80 bar, by the look at it...
(Most of the CO2 in the cartridge is in liquid form.)
