I take it you can buy headsets that fit the tapered head tube, but match 1 1/8th steerers?

That's certainly one answer.
Above is a link to all the hope pick and mix headsets, these can be bought through any hope dealer quoting the part numbers in the document.
+1 to the hope stuff, the HS136 is a simple collar fits over the 1 1/8 to give the forks a tapered steerer then you can use the existing headset too. I have this setup and it works well.
Do you have a taprred headset already? If so hope do a collar which sits over yr steerer tube and turns it into a tapered steerer
