Depends on which model of pedal, they don't all work in the same way
the last pair of SPDs i had (a few years ago) used a cone and locknut on the end of the axle to pre load the bearings.
You remove the pedal body with the special tool that comes with the pedals (unscrews the collar on the crank thread end of the pedal axle).
When the body is off and the axle is exposed you should see a silver metal sleeve over the bearings and a very thin cone and locknut on the end of the axle.
you need a very thin spanner for the cone, holding the cone still you loosen the locknut, then tighten the cone until the play has been removed from the bearings then holding the cone still you tighten the locknut against the cone.
You need to make sure the spanner you use for holding the cone still is thin enough so that the locknut can be fully tightened against the cone. Unless you buy a proper cone spanner in this size, you may as well grind down a cheap spanner to the correct thickness.
The first time I did this, the spanner i used was too thick and the locknut did not tighten fully against the cone as it hit the edge of the spanner first. This meant the locknut worked loose on the first ride after I rebuilt them and the pedal body came off ๐
They are lx about two or so years old. No special tool came with them!
Ok, a case of holding the pedal body somehow, undoing the nut, remove body, and it's a bit similar to adjusting a non-cartridge hub - in principle.

PS: You wouldn't know the size of the axle nut, so I can sort out an old suitable spanner to grind down before taking it apart - no way I'm getting the grinder to my Snap-on! ๐
