Stock up on spares is the boring answer - chains, rings, cassettes, tyres etc.
How about a flashy helmet or jersey? Something you can show to the giver of said voucher and you can extol it's practicality too!

I like the idea of a flashy jersey. I was contemplating some fancyish bib shorts (I already have homies ones) but am not sure the voucher giver would appreciate seeing me in them!!

Bought an Exposure Joystick and I've been very pleased with it

I generally buy a tool I couldn't normally justify if I end up with an 'unexpected' voucher.
