The opening theme of Alien (the 1979 film) sets the scene extraordinarily well despite being a pretty sparse piece. Get Carter gets my vote for best though.

Loads of great themes there, but not too many songs.. The Italian Job opener is great but another two that stand out for me...mainly for childhood memories..

John Barry's OHMSS theme made me desperate to learn to ski when I was a wee boy - I think it still plays somewhere in the back of my head everytime I stand at the top of a piste.
