I’d like to be able to still use Flight Sim X, as well as all the boring stuff.

Not bought a laptop for nearly a decade, so well out of touch.
This Lenovo Z50 has a dedicated graphics card and seems to have a decent processor and plenty of memory.

I’m really in the dark when it comes to new stuff – all advice appreciated.

I’m using a Z50 now. I’d say it would have no problem with FSim, mine works fine for Minecraft and other Steam games when the kids borrow it, an it’s only a i3/4MB/noSSD. The screen is very glossy, so a matt screen protector would be a good addition. In terms of build quality, it’s a bit flexy, so I wouldn’t want to be lugging it about in a rucksack regularly, but mine doesn’t leave the house.

Thats a hybrid drive which is OK.

I think you’d need a comparison between i7 Haswell HD graphics and this dedicated card – but if I had to guess I’d say it must be better or why would they include it over the HD graphics beyond freeing a bit of shared memory?
