    The classic mozzarella, basil, tomato and Garlic olive oil, salt and pepper.

    What Grum says, panzanella is awesome.

    Love a Caesar salad too.

    Anything with pasta, chicken and cured ham ain’t no salad, just cos it’s cold!

    The British have made salad pish, when a right good one is a star of any meal.

    growing up in the ’70’s we never got proper salad, lettuce cucumber and tomato with no dressing whatsoever
    On another note in Scotland we had to endure Shippams meat paste or beans with crappy pink sausages disgusting it was, whereas hummus, olives,feta, halloumi and proper bread nowadays kids are spoilt for choice

    Nigella chopped salad is lovely and any spare pomegranate seeds go into everything we eat that week:

    1 cup each: diced Courgette and cucumber (deseeded)
    4 thinly sliced spring onions, white and pale green parts only
    1 1/4 cups deseeded diced tomatoes
    1 clove garlic, peeled and minced
    1 cup pomegranate seeds
    1 tsp each: dried mint and dill
    1 tsp sea salt, plus more to taste
    Finely grated zest and juice of 1 lemon
    2 tbsp extra-virgin olive oil
    4 cups loosely packed roughly chopped Italian parsley

    Add all ingredients except the parsley to a large mixing bowl and toss together very well. Let stand for 10 minutes. Add the parsley, toss again though, and serve

    Greek salads all looking good so far….. except….

    Loads of sliced red onion
    Half a cucumber in chunky slices (cut in half lengthways, rake the skin with a fork then slice diagonally in random chunks)
    Large ripe tomatoes sliced thin
    Black olives
    Two to three tablespoons olive oil
    Tablespoon red wine vinegar,
    Plenty Oregano
    Black pepper
    Mix the above and allow to stand in fridge to mingle flavours

    Before serving add diced feta plus torn/chopped fresh mint leaves then squeeze quarter/half a lemon over it
