    Don’t know, but one of the guys working for me at the moment made Anzac biscuits for us all yesterday. Yum.

    Try this…..

    200g Margarine
    100g Brown Sugar
    Golden Syrup
    Black Treacle
    300g Porridge Oats
    100g Raisins
    75g Soft-dried figs
    50g Soft-dried Apricots.

    1. Set oven to 150 or 140 for fan-assisted, shelf in the middle.
    2. Stick big pan on scales and measure in the marge and brown sugar and heat on the a medium hob until it’s all melted nicely.
    3. Add a tablespoon of golden syrup and half a tablespoon of treacle.
    4. Add porridge oats and fruit of choice and mix together well.
    5. Line a shallow medium sized tin with baking paper and pour in mixture, flatten it down to an even thickness with the back of a spoon.
    6. Stick it in the oven for 20 mins.
    7. Once done for 20 mins, remove and divide up with a knife as desired and leave to cool and set.
    8. Wrap in clingfilm or put in a sealed tub and they should last for a couple of weeks.

    Trust me, these are great. We’ve been using this recipe for 3 years and always goes down well. We switch from Raisins to cranberries to whatever takes our fancy and they always taste great.

    Method’s the same as Nickegg above but slightly different ingredients.

    250g porridge oats
    170g mix of raisins and dried cranberries/blueberries
    150g butter
    75g light or dark muscovado (dark is a bit stickier)
    few slivered or finely chopped almonds
    3 tbsp agave nectar (supposed to be low GI though I just like the taste – Tesco sell it)

    Makes about 12 bars

    Amount depends on how wide you cut them.

    We use that recipe for our weekday lunches too, makes 10-12 decent size bits.

    We also changed the sugar to Muscovado, makes them taste real nice.

    We got the recipe from an issue of WMB along with one for shortbread and cake.

    Delia on-line has a recipe for chocloate marbled energy bars.. They are very good.

    Try Tiffin (sp?) cake. Got some on a ride recently, it’s like a beefed up chocolate bar.

    I make mine like this…

    Oats
    Pure honey
    Smooth peanut butter
    Raisins etc.
    Dark chocolate at least 70% coco

    melt the honey and peanut butter together, add the oats, mix, add whats left, mix and put in a tray in the fridge. When cold, cut up into bars/blocks. Moist, soft and chewy.

    The stuff is like rocket fuel 😀

    150g sugar
    100g golden syrup
    100g unsalted butter
    250g good quality oats
    Handfull of raisens
    Handfull of chopped glace cherries
    Handfull of chopped mixed nuts

    One handy hint is not to over cook it. It can often look not quite done at the set time and even after another 10mins in the oven it can still look exactly the same, but unfortunately by then once it’s cooled it tastes all dry and nasty.

    A mashed banana and fresh cut apple in flapjack is pretty tasty. Always reminds me of apple crumble…has me craving for custard!

    cherries, and a pinch of green chile. Sounds wrong, tastes phenomenal.
