I've developed a creak on my frame and I think it's the seatpost. Can I grease a carbon seatpost with an ally frame?

not recommended, as grease 'can' make carbon swell, carbon assembly paste is recommended.

I would suggest grease is better than nothing, but carbon paste if you can be bothered. Mine has been greased for the last 2+ years and no sign of anything untoward going on.

I would disagree, don't use anything on my carbon seatposts. If slipping/creaking I'd definitely go for assembly paste over grease.

No, nothing is better than grease, on average. In some cases grease is OK, but it depends entirely on the laquer etc.. used on the carbon. As mentioned, grease can cause carbon to swell.

Does the assembly paste 'stick' the post or can it still be moved? I tend to adjust seatpost height a few times on a ride...(yes, I know, get a dropper....it's on the wanted list)

Assembly paste doesn't stick - it is just a bit higher friction so if the seat post is slipping you don't have to crank it super tight to hold it.

Carbon paste is - put very simply - a grease with some media in it to increase friction and reduce the needed clamping force.

It feels like silicone grease but I don't know for sure what the actual chemical make up is.

I use it to clamp all my seatposts and handlebars whether carbon or not.
