I'm a noodle newbie and get overwhelmed with all the choices in the supermarket

anyone got any recipes/tips ..

basic thai soup with noodles, takes minutes to make and you can make it as hot as you want

load of recipes on 'tweb

usually just stock, sliced garlic, sliced spring onions, chilli, fish sauce and a bit of corriander in our house

Grill some chicken with whatever oriental spices you fancy. Chop up and chuck in a bowl with noodles, chicken stock, coriander and cabbagey style things. Dead easy and delicious. Also messy to eat.

last night did a stir fry;

onion,carrot, peppers, mushrooms,beansprouts whatevers about really.
generous splash of chilli oil
fish sauce
soy sauce.

could have done with a bit of garlic.

the OH does coconut milk, chilli and soy sauce stir fry - that is good.

or chilli, coconut milk, lime and ginger - for a thai kinda feel.

happy noodling 😉

although jamie oliver is a bit of a c**t his recipe for beely pork n rhubarb noodles is so so lush!

fish sauce, lime juice, sweet chilli sauce, coriander, red chilli [deseeded] grated ginger - pan fry some chicken strips and toss it into the mix. Then add the noodles, also lovely if you change the noodles for salad. Chops some roasted cashews and sprinkle over the top... yum!

Hungry now.

Spinach and soba noodles (Buckwheat noodles).

This on of my staples and have it at least once a week:

Stir fry some spinach (preferably baby) with 3 garlic cloves and a thumb sized piece of ginger, finely chopped. Stir fry until spinach has wilted. Add cooked soba (or udon) noodles, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, juice of 1 lime, stir and remove from heat.

Serve with topped chopped fresh red chill and sesame seeds.

If you're making soup or broth, use the thin clear rice noodles rather than the thicker egg noodles. They only need a minute's soaking then adding at the end rather than actual chucking them in with the rest of the meal while it cooks.

Also, the best super noodle type things are the obscure brands from Chinese supermarkets and the foreign-grub sections of your larger supermarkets. More spicy, less salty than super noodles or pot noodles.

You put together a very quick, easy and even nutritious meal by livening these up adding frozen peas, fresh mangetout or baby corn, spring onions, fresh chilli and prawns while the stock is bubbling away.
Better off making your own stock and flavouring if you have the time, obviously.
