Any recommendations for which glue I should use to stick an oak threshold to non ceramic tiles?
Google seems to suggest CT1, does this sound reasonable?

All the above is good.
Also, 'Sticks like s**t' is good. I've used it a lot on a project at work recently. Very strong, despite the rubbish name.

I haven't found anything that CT1 wont stick, the whole house is held together with the stuff

Yep, CT1 or SLS (go for clear rather than white) are both good.
useful if you can leave the door closed for a few hours once you’ve glued and positioned it and tap three wedges underneath. Left, right, middle. (In case it’s not sitting quite flat by itself.)
