Go have a wander round the cathedral. Have a coffee on the square beforehand/after. Patisserie Valerie does very nice cakes/coffee.

Wander around the centre and wonder at humanity whilst counting your own blessings.
Then get the hell out and never return!

When Deltics ruled the east coast main line, sit on platform and take down numbers.

Cathedral and coffee as said above....

Film at the cinema?

Drive to Stamford for a wander around...

Bowling

Ice skating

Drive to Deeping for fish & chips at Linfords before having a look around Terry Wright's cycles...

Edit - Peterborough museum is surprisingly good, too...

Drive around the surrounding countryside and gaze in wonder at the complete lack of hills. It's very strange.

Controversial Jamie!
Close call, but Linfords for me. I know them in there though, so perhaps have more of a vested interest...

I bought a car there once. Took about 4 hrs. You could do that?

Take pictures of Cathedral in repair/scaffolding.

Jump in the car.

Visit Burghley House in Stamford.

Visit antique shops.

Eat out.

Then shop and come back to Peter-bog-horror.

As said,

Cathedral.
Museum.

Bring your kit and have a swim at the Lido.

Pint and some food in Charters (pub on a barge - DO NOT enter the Grain Barge by mistake though else you succumb to their dodgy chinese food).

(loving the comment about lack of hills - always find it funny how that REALLY seems to freak some people out when they come to this part of the world)

Conversely, it freaks me out when I go where there is hills, as I like the feeling I can see my house from about 20 miles away.

In the fens mostly likely to not involve bikes - at least not in any conventional usage.

Barnack Hills and Holes for some botanising and ornithology, the Nene Valley Railway, go to Wisbech to visit Peckover House (about the only reason to go there unless your in-laws live there, although it is actually quite pleasant).

As well as the cathedral, of course.

Blimey, it's the cathedral then!
It's fairly flat where I'm from, so I'll be ok, unless I bump into boblo ...

I know it has been mentioned, but I should mention the Museum again, as they have spent a lot of money on it recently.

http://www.vivacity-peterborough.com/museums-and-heritage/peterborough-museum/

Plus it, and the cathedral, are all easily walkable from the passport office.
