Apple have said that my Cloud is nearly full.
I've had a look and most of it is labeled as back up.
What does this mean, can I back up elsewhere (i have a separate hard drive) what would happen if I just deleted it and how would I do it?
Don't forget I know **** all about this stuff so be gentle.
Thank you.

It is most probably your iPhone/iPad backups. Switch these to your computer (in iTunes) and that should clear up iCloud.

On your iDevice go to Settings -> General -> Storage & iCloud Usage
Under iCloud select Manage Storage.
If you can select backups, do and then Edit.
Delete what you don't want.

You can backup using iTunes to your PC/Mac, rather than iCloud.
