Sourdough starter question

We have a sourdough starter that's been happily plodding along for the last six months or so, being renewed once a week as (as I understand) is normal as we have pizza every Saturday night.

It was last refreshed seven days ago and we go away today and won't be able to use it again for another 14 days.

Will it die if I leave it? If I refresh it today will it last 14 days? Is there something else I need to do so when I next get to make a batch of pizza dough on 11 April that it will be still usable?

Leave it in a sealed jar in the fridge.

it may develop a liquor on top which you’ll want to get rid of once you come back.

It’ll be fine.

What deadlydarcy says. Should be fine left in the fridge and if not a couple of feeds once it’s back out will put it right

No it will be absolutely fine. I've had mine in the fridge for a couple of months before now with no adverse effects.

Fridge is fine for weeks.

Can freeze if you want to keep for months - will take longer to "wake up", if freezing seems to me to be best to feed then immediatey freeze (before it starts rising) rather than freezing stuff that's been sitting in the fridge for weeks first.  Then when you defrost it you leave to fully defrost in your warm place and 24 hours more you should see some signs of life.

Sealed in the fridge it will last a month or more no problem. It would just require a bit more time to revive it fully.

^^^ So if I made the pizza dough on the Thursday before the Saturday I will cook with it, it should give the pizza dough time to prove? Then, by the next Friday hopefully it should be okay to continue as normal?

For reference, it is usually most active on the second, third and fourth day after reviving at the moment.

I refresh/feed mine daily and bake 2-4 times a week, whenever I go away I make it up a little thicker than usual and put it in the fridge, it's always been fine. Mines just over 5 years old now.

I don't even put it in the fridge.

You can bring it back from smelling like stilton.
