I need somewhere flat with tarmacced/hardpack trails to take my daughter for her first “cycling adventure”.

No mud, no gradient, access to toilets and a café. Has Sale got all of this?

Delamere Forest is fairly flat in places 30 mins from Tatton.

Dunham Massey would be better than Sale but Delamere is fantastic for little uns (and big uns if you get chance to sneak off)

From Jackson's boat up the Mersey to Chorlton waterpark and back. Option to add in Sale Water park if all is going well.

What is the trail surface like at Delamere these days? I've not ridden there for 10 years and remember it being a swamp.

It's a sort of gritty fireroad surface on the main paths if I remember correctly. Not been for a year or two but can't ever remember those main paths being muddy.

Its probably 18 months since I last went, the paths/trails were fine for young ones, the off piste trails were ok, weather dependant I suppose,

Delamere is a bog off piste, but the fire tracks are perfectly fine. You could do a lap of Blakemere Moss and finish off at the Station Cafe for the best full English 🙂
Park up on the Mouldsworth to Hatchmere road (there is one car park, or loads of road side parking) and when you've finished drive around to the Station for the rewards.
