I want to restore a seat that’s been painted in red woodstain. Is it possible to either paint over it or easier to remove with something akin to paint stripper/sandpaper? I either want to restore to natural wood colour or something other than red.

You'll never get it back to natural wood as the wood has been dyed. Paint it with Zinsser Stain Seal to kill the stain and then paint it whatever colour you like.
