If there is only one member of staff in a company who performs a certain job which essential to the company, can the company outsource the job to a external company and make that member of staff redundant?

I'm guessing yay?

Yes, they are making the job redundant by outsourcing it.

Bit of a tricky one as in theory the job still exists, however the company need for that post is being made redundant so therefore yes they can make you redundant. However you should find out if you can move to the new company, if a body has to be on site why cant it be you? You could check dti.gov.uk or acas.org.uk

Good luck
