Whats the best way to do it nowadays? I dont have a tape deck anymore, and want to set up something to record, thats on in the middle of the night?

I would have thought you could sky+ it. I can record it on my freeview PVR.

Yes, just like TV. Find the programme in the schedule, hit the record button
If it's a BBC radio program, there's tools like get_iplayer that you can use to download the streams. get_iplayer has a pvr mode that you can use to automate downloads.

I have Audacity, but the quality on bbc iplayer is crap isnt it?
Maybe Ill sky+ it then connect my amps output to a USB vinyl deck I have got and record through audacity?
Have a look at 'Radio Downloader' for a quick iplayer download client.
