1. I asked recently about replacing a plasterboard ceiling (it's a poor finish and there's no insulation).
I got quoted £900: £250 materials + 3 days. I reckon I can get materials for <£250 and do it meself (I'll paint the kitchen ceiling I've done first to check I am capable fo a good enough finish). I then wondered if I could get some expanding insulation product (like cavity wall stuff) and inject this into the cavity (there's a flat roof above so I can't access from above) then tidy up the finish. Is this possible?
2. I havea new stud wall with a fireplace & fake chimney brest. It's unfinished. I want to paper with decorative paper, in order to be able to re-paper in future I need to skim over the plasterboard yes? Is one coat enough? Should I get those metal corner/edge things to protect the corners?

errmmm - if you are replacing the ceiling why not put the insulation in first then the plasterboard. IIRC thats the usual way. 50mm sheets of jablite{??} polystyrene of you can get polystyrene or other insulation on the back of plasterboard.
The metal corners are not to protect the corners but to give a crisp finish to the corners easily. Yes use them
Option 1 - as you say (well 200mm roof insulation)
Option 2 (if possible) do it like cavity wall.

how big is the celing if its gonna take 3 days to insulate, board and skim?
as for fake chimney breast two coats of skim 1@ 3mm and 1@ 2 mm
second coat goes on as the first coat is tacky, then flatten and finish to a smooth finish.

I wouldn't be competely filling the space above the current ceiling with anything. There is likely to be a need for air circulation space around the timbers of the roof to prevent a build up of condensation. Usually 50mm of free space around timbers is recommended. If you can locate the joists well enough there's a lot to be said for leaving the ceiling in place and insulating below and re boarding.
there'll still be 6-12" air space left to the roof.
Just had 2 ceilings repaired (not re-boarded) and re-skimmed - total area approx what you have 16 x 9 ...
cost £150, cash in hand. 2 blokes, started at 8am. finished for 1...
and £250 for materials seems bloody step for that size as well - presuming they are quoting for say just foil backed board nails / screws, edge beads and a few bags of finish?
Am gonna clear up quote - think he was working on 5m x 5m, but drywalling only - i.e. no skim, just joints.
