This Northumberland lad living in Cardiff had to learn how to make it himself. It's bloody easy too; not the fanny about that on-line recipe guides suggest.

Soak your peas overnight,
Add loads of water and plenty of salt,
simmer until it looks right.
Stick it in your ham butty.

You can add ham and stuff, or even strain it through a sive but would you really bother? I know Porky Gebhards in Morpeth doesn't bother with that shoit.

The butcher we get it from pours in the fat from his home cured ham. Yum.

I hope everyone buys it by the scoop. Dollops are imperial, scoops are metric.
