What preparation or undercoat if any do I need or is it just a case of a few coats of white?

Thanks

Matt grey what? Paint? In good condition? Then go for it just paint straight over. 2 maybe 3 coats should do it.

When I grate nutmeg over my egg custard it's brown.

We used white base coat paint first when we repainted  dark walks with ‘hints of white’ (it seems to be thicker  and covers better - apparently)

Use trade quality vinyl Matt emulsion as the colour pigment is far stronger than regular DIY quality Matt emulsion. Trade paint will cover in less coats.
