I've made a new door for a shed out of T&G and 1 1/2"x4" timber. I've put it all together to check the fit before intending to take it apart again to paint as I was labouring under the impression that it is necessary to paint/protect all sides of the wood. But now it's together ... part of me is saying just paint it as is...FWIW the timber is on the inside so will see minimal rain (but I guess will see some moisture from the air etc).

So is it worth taking it apart? Am I over-thinking it?

Well that was what my brain was also saying, but I can't trust it to make an objective decision where more faff is concerned as obviously it's going to pick the easiest route.
If it was an existing door then I wouldn't consider taking it apart, but this is a new fresh built door from untreated timber.

I suppose if you want the door to outlive you, then taking it apart and sealing all edges would make it last longer, but a decent treatment (applied regularly) should be sufficient.
